Happy Thanksgiving! Granny’s Pineapple Rice Recipe

Happy Thanksgiving to you and your family! At the Diehl’s we are thankful to share great food with family. One dish that always makes an appearance on the Thanksgiving table is Granny’s Pineapple Rice. It’s great with Ham – so make it again for Christmas!

2 cups uncooked rice

2 egg

1 cup sugar

1 cup milk

1 18-20 can crushed pineapple (do not drain juice)

1 teaspoon vanilla

Cook rice per package instructions. Place cooked rice in 2 quart casserole. In large bowl lightly beat eggs. Add remaining ingredients and mix well. Pour pineapple mixture over rice, breaking up rice and mixing liquid throughout. Bake at 350 about 1 hour until liquid is absorbed and top is golden brown. Serve warm. Leftovers? It’s also delicious for breakfast. YUM!
